Kōen 光円
A circle of light. A single object made well.
Kōen exists to make one knife, and to make it properly. We do not sell twelve sizes, three steels, a paring companion, a bread loaf. We sell a 210mm gyuto, forged in Sakai by a man whose father and grandfather did the same work in the same workshop.
The decision was simple. A kitchen needs one knife it can trust. The rest is decoration. We chose the gyuto because it is the most useful — long enough for a shoulder of lamb, agile enough for shallots, balanced enough to use for an hour without complaint. We chose 210mm because it suits both a domestic counter and a line cook's station. We chose Aogami #2 because it takes an edge the way nothing else does, and because it forgives the owner who is willing to learn it.
Every knife is made to order. When you commission yours, Tanaka-san begins it the following week. Six to eight weeks later it arrives, with a card he signs by hand. There is no warehouse. There is no second model planned. There is no sale.
We answer our own mail. If you write, a person who knows the knife will write back.
